With no table-turning and the kitchen open all day, SINTONIA is a new option in Eixample where you can extend the after-dinner chat and enjoy, without no rush, the cooking of ex-Bulli chef Pablo Tomás.
It opened in February and has been honing and sharpening its offerings. SINTONIA, a dining space in Eixample, was conceived with an original Scotch bar, to help the after-dinner conversations take on their full meaning. Because that is the idea: to make the most of our time, without looking at the clock, leaving the rush behind in that elegant passage that leads also to the gardens of Palau Robert.
Free of burdens, you will enter the new restaurant feeling in tune – en sintonía – and ready for the delights prepared by the chef Pablo Tomás. Having passed through El Bulli, Arzak and Via Veneto, the Aragon-native chef has become stronger in SINTONIA, where he has blended experience and flavour in an ingredient-oriented signature menu that adapts to different uses and customs, without limits. The kitchen is open from 12:30 to 23:30. You’re in charge, you have time. SINTONIA does not turn tables.
You will find a menu that changes with the seasons and the chef’s ideas, where the ingredients remain bold after hours of cooking in arroz de montaña rice, kale trinxat, smoked salmon or Russian salad roll – a curious Russian salad rolled in cooked potato puree and finished with mayonnaise and pickles. That precision in the cooking and the combination of pickles is a trompe l’œil. Go back to base to explore. Tomás plays with his cuisine.
The offer is completed with a list of snacks and sharing dishes (oysters, hummus with carrot sticks, oysters au naturel or grilled, roast chicken croquettes, cockles, 00 anchovies, gilda skewers and assorted platters) to cover snack times and lingering after dinner. The dessert menu also serves as a way of filling the space between meals. Cheesecake, smoked croissant with cream, mango, coconut and pandan, or gianduja, coffee and toffee. Tomás reinvents his cuisine.
SINTONIA champions the importance of after-dinner relaxation, enjoyment and making time count. It does it in a classic space, brought into the 21st century, with two areas differentiated by lighting, divided into two spaces in one to choose from. On the one hand, the inner room, with dimmer lights; on the other, natural light shines into the internal patio, which is protected from noise and replete with flowers and decorative detail. And the so-called hothouse, the pre-patio, a space gained from the dining room that also drinks in skylight through glass. You choose. You have time. You can change.
The décor in every room incorporates natural materials (marble, wood and stone) and contemporary style. Only the upholstery of the chairs breaks up the embrace of a simple colour scheme. This cosy embrace is enhanced by lighting that provides intimacy, tranquility, that creates corners for confiding and almost-forbidden after-dinner chat.
